potato pancake





Ingredients:
5-6 potato, peeled and shredded, extra water removed
All purpose flour
2-3 eggs
Salt and pepper to taste
Additional taster; eg shallot, red pepper, shredded chicken, minced meat, chives

Method:
Add all the ingredients together in a big bowl.
Add more flour or water until you reach the thickness you like.
Heat oil on a pan
Fry the batter like you would fry pancake.
Nice to be enjoyed hot with chilly sauce or mayonnaise or any sauce you like. Or you could enjoy it like I did- on its own.

coffee custard cake






Ingredients






Cake:
A. ½ cup of instant coffee
B. 5 tablespoon of hot water
C. ½ teaspoon of vanilla essence
D. 1 ½ cup of granulated sugar
E. 4 eggs
F. 1 cup of milk
G. 2 ¼ cup of self-raising flour
Custard:
A. ¼ cup of skim milk
B. 2 cups of water
C. 4 tablespoon of custard powder
D. Some vanilla essence
E. 1 tablespoon butter
Agar layer:
A. 2 tablespoon of agar
B. ¼ cup of water
C. Sugar to taste
D. Cherry or nuts for garnish







Direction



cake:
1. Preheat the oven
2. Dissolve the coffee in the hot water
3. Sieve the flour
4. Whip butter, vanilla essence and sugar until
5. Put in egg one at a time
6. Put in milk a little at a time
7. Put in the coffee
8. Fold in the flour a little at a time
9. Bake until the toothpick comes out clean

Custard garnish
1. Put in all ingredients for the custard except for the butter
2. Stir on a small fire until thicken
3. When the custard thicken, add in the butter
4. Pour the custard on the cooled cake
5. While you wait for the custard to cool down, prepare for the agar layer
6. In a pot; put in all the ingredients for agar and simmer over low heat until everything dissolve
7. Sieve the dissolved agar and pour over the cooled custard that have been garnished with cherry or nuts.
