strawberry short cake...



ingredient:

For sponge cake:
4 large eggs, white and yolks separated
4.2 ounces (120 grams, 9.5 tablespoons) granulated sugar, sifted once
3 tablespoons milk, at room temperature
1/2 teaspoon vanilla extract
4.2 ounces (120 grams, 13.5 tablespoons or around 1 cup) cake flour or superfine flour, sifted 3 times
½ teaspoon of baking powder
1.2 ounces (22 grams, 3 tablespoons) butter, melted

For the stabilized whipped cream frosting:
1 teaspoon unflavored gelatin
4 teaspoons cold water
1 to 1 ½ cup cold heavy whipping cream
1/4 cup confectioners’ sugar
1/2 teaspoon vanilla extract


For the simple syrup:
1/4 cup granulated sugar
1/4 cup water
8 – 10 ounces fresh strawberries


method:

To make sponge Cake:
1. Preheat the oven to 350 degrees Fahrenheit (170 to 180 degrees Celsius).  Line a 7 (18cm) or 8-inch circular cake pan with parchment paper, or grease the cake pan with butter, then lightly coat the pan with flour.
2. Add the sugar to the egg whites, and beat the egg whites until they are stiff and glossy.
3. Add the egg yolks to the egg white mixture, and gently whisk until the yolks are incorporated.
4. Add the milk, vanilla extract, and flour + baking powder shifted together (in that order) to the batter and gently fold them into the batter with a spatula. Add the flour a spoonful at a time.
5. Fold in the melted butter until it is well combined. Try to maintain the fluffiness of the beaten eggs.
6. Pour the cake batter into the prepared cake pan, and get rid of any air bubbles in the batter by dropping the pan on a counter once or twice.  Bake the cake for 25 to 30 minutes.  The cake is done when it is golden brown and springs back when pressed lightly.  Let the cake cool completely on a wire rack. Run a blade around the inside of the pan to loosen the cake, and remove.
To make the Stabilized Whipped Cream Frosting:
1. Put the cold water in a small saucepan.  Sprinkle the gelatin over the surface of the water and let stand for 5 minutes (do not stir).  Place the saucepan over low heat and stir constantly with a wooden spoon just until the gelatin dissolves.  Remove the saucepan from the heat and cool to room temperature. Do not let to cool for too long or it will solidify.
2. In a mixing bowl, combine the whipping cream, sugar, and vanilla and beat until slightly thickened.  Then, while beating slowly, gradually pour the gelatin into the whipped cream mixture.  Then whip the mixture at high speed until stiff.
To make the Simple Syrup:

1. In a medium saucepan combine the sugar and water.  Bring the water to a boil, stirring, until sugar has dissolved.  Remove from the heat and allow to cool. I add a little orange juice if you prefer it.

To assemble the cake:
1. Reserve 6 to 1o strawberries for decorating the cake.  Slice the remaining strawberries into thin slices (about 4 slices per strawberry).
2. Slice the sponge cake horizontally into 2 layers.
3. Place one sponge layer cut-side up on a cake board or serving plate and lightly crush the surface with the simple syrup.  Spread a thin layer of whipped cream over the cake layer and arrange the strawberry slices over the surface.  Spread an additional layer of whipped cream over the strawberries.  Brush the cut-side of the second layer with the simple syrup and place it over the first layer.  Frost the sides and top of the cake with the remaining whipped cream.  Decorate as desired and garnish with the reserved strawberries. put some syrup on the strawberry for a glossy finish and for it to last a bit longer (before finishes into your tummy)

donut... ( 0 )



Its been a while now, and i have always wanted to try this...

Ingredients
  1. ½ cup warm water
  2. ½ ounce active dry yeast
  3. 1 teaspoon of white sugar
  4. ¾ cup of lukewarm milk
  5. 1/3 cup of butter
  6. ¼ cup of white sugar
  7. 1 teaspoon of salt
  8. 2 eggs
  9. 4 ½ cup shifted flour
  10. Oil for frying

Method
  1. Pour 1 in a bowl, stir in 2 and 3 , allow to froth (5-10 mins).
  2. Place 4 and 5 in a small saucepan over med heat – until 5 melted and 4 have tiny bubbles. Remove from heat
  3. Place 6 and 7 in a large mixer. Pour in milk, mix until dissolve. Let cool until warm.
  4. Beat in yeast, 8, and 9 (a cup at a time) in low speed until smooth.
  5. Take out the dough, kneed until smooth and elastic. (estimated 5 mins)
  6. Form a ball in a bowl, grease top of dough, cover, put in a warm place, and leave for 1 ½ hour.
  7. Punch the dough, roll out to ½ inch thick, cut, and let rise (around 30 mins)
  8. Fry until golden.
  9. You may coat with plain icing sugar, or with a twist of cinnamon. Or you may even melt some chocolate and glaze the doughnut. The possibility are endless.   


you can also do button-hole donut.. trust me-kids will love this.. they are so cute..

not your average tomato sauce pasta


an idea that I got from watching cooking shows.. good for those who somewhat refuse to eat their greens.


 ingredient

- a can of tomato puree
- a bunch of spinach
- mince meat
- mushroom
- salt to taste
- 2 onion, diced
- oil for saute


method

- in a pot, saute 1 onion until fragrant
- add in the tomato puree, cook until darken, stir occasionally
- add in the leaves of the spinach, cook until soften
- if you have an immersion blender, this would be a good time to use it, if not, use a regular blender, put aside
- saute  2nd onion until fragrant
- add in the mince meat, cook until crumbly
- add in the mushroom, cook until soften a bit
- add in your tomato/spinach sauce
- add salt to taste.
- pour onto the pasta of your choice, you may even add some cheese onto it to give a tang to it.

banana walnut upside down cake




Ingredient:
caramel:
1/2 cup white sugar
1/2 cup brown sugar
2 tablespoon butter
1/4 cup hot boiling water
banana cake batter

Method:
1) melt white sugar, stirring constantly until starts to brown (caramelize)
2) add the brown sugar and butter, stir until everything become smooth. 
3) add the boiling water (with care) and stir until everything dissolve
4) add the chopped nuts
5) pour into baking pan lined with baking parchment (if you omit the baking parchment and line with butter and flour, you will get a darker toned cake, as displayed)
6) left to cool before pouring the cake batter
7) bake in lower temp than directed by original recipe, around 130 degrees-150 degrees, until brown and the pick comes out clean from the middle of the cake.
8) flip the cake upside down to enjoy the nuts at the top of the cake...

tasty to be enjoyed warm.. though room temp-cool is also fine.. (",)v

Pasta Kari.. ummi style






Spaghetti kari
1 paket spaghetti
1 tin tuna kari
1 tin tuna cili
5 ulas bwg merah + 3 ulas bwg pth + 1” halia
2 camca serbuk kari
1 camca cili boh
Santan pekat
Minyak tumis
Daun salad + timun (hiris spt utk laksa)
Daun kesom


Kaedah
1-    Panaskan minyak, tumis bahan yang ditumbuk hingga garing
2-    Masukkan rempah kari dan cili  boh, goring garing
3-    Masukkan tuna yg sudah dilecek halus
4-   Masukkan santan
5-   Apabila mendidih, masukkan daun kesom.
6-  Garam secukup rasa
7-  Makan dengan spaghetti

sepatutnya konsistensinya seperti ala2 kuah kari, tapi hasil saya pertama kali, macam kuah pasta pekat... jadilah...

mee hailam- resepi mak...









ini resepi yang saya ambil dari mak saya...
boleh menggunakan samada mee kuning atau pasta seperti spaghetti.

jika menggunakan mee kuning, celur dengan air panas untuk menghilangkan 
rasa kapur dari mee. Jika anda menggunakan pasta, rebus pasta seperti arahan
 pada pek bungkusan pasta dan akan dimasak sekali dengan kuah apabila kuah sudah sedia. 

ini resepi untuk kuah mee hailam..
Di dalam kuali, tumis bawang putih. Kemudian masukkan 3 sudu besar sos tiram. Masukkan perencah mengikut kegemaran masing-masing, contohnya udang dan sotong.
Masukkan  1 camt lada hitam yang telah ditumbuk halus

Masukkan air rebusan udang 1 cawan (saya menggunakan air rebusan ayam kerana saya menggunakan ayam sebagai perencah saya).   Masukkan kicap pekat dan kicap cair
Kemudian masukkan Sayur-sayuran - lobak merah, sawi dan cili merah, dan buah tomato yang di potong kecil.
Tambah garam secukup rasa.

Bancuhkan 3 sudu besar tepung jagung dalam air dan tuang ke dalam kuali untuk mendapat kuah yang pekat.

Tuangkan kuah yang telah siap dan masih panas ke atas pinggan yang berisi mee, atau masukkan spaghetti ke dalam

mushroom soup recipe mak


resepi mak

ingredient:
A) 2 shallots, sliced
B) a large bowl of mushroom, roughly chopped
C) 3-4 cups of chicken stock
roux:
D) a tablespoon oil
E) a tablespoon of flour
F) a cup of milk
G) a tablespoon of butter
H) salt and pepper to taste

methods:
1) saute the shallots in a saucepan
2) put in the chicken stock and put in the mushroom. let it boil for a while
3) in another pot, melt butter until fragrant, stir in the flour, and lastly, add in the milk.
4) either by using a immersion blender, or a tabletop blender, blend the mushroom and shallots until you reach the consistency that you wants.
5) add the roux to the mushroom, or either way around.
6) add salt and pepper to taste.
7) if the soup is too thick to your liking, you can always add in more chicken stock.
delicious to be enjoy with freshly baked bread.

Mushroom and chicken cream pasta



The base for this pasta is:
1- saute garlic
2- add sliced mushroom
3- add chicken cream soup
4-pour in the pasta of your choice

I tweak it a bit by:
1- saute garlic
2- browning a slab of chicken in the oil and garlic
3- take out the chicken and cut into small piece. discard the very brown garlic
4- saute new garlic into the same saucepan, scrape the pan while you're at it
5- add back in the chicken, cook a bit
6- add slice mushroom, preferable shitake
7- add broccoli
8- add in the chicken soup, stir in well
9- add in milk or cheese if you want it creamier.
10- add salt and pepper to taste.
11- pour onto pasta of your choice.

Spaghetti with tuna in tomato sauce






A refreshing twist to pasta that I didn't discover before..

Ingredient
a) 3/4 pack of pasta, but i used spaghetti
b) cooking oil, preferably olive oil
c) 3-4 cloves of garlic, chopped
d) a small can of tuna in oil
e) a small can of tomato purée
f) a small bottle of fruit juice (the recipe requested for white wine, but juice works too)
g) salt 
h) dried thyme and oregano

Methods
1- sauté the garlic until fragrant
2- put in the tomato purée, cook until the colour darken
3- add in the juice, and wait until it reduces, stir occasionally
4- while waiting, cook the pasta according to packet's instruction
5- add in the tuna, the size of the tuna depend on you..
6- add in salt and herbs to your liking
7- put in the pasta, coat using thongs.
8- let the sauce soak for at least 5 mins.
9- enjoy!



menjauhi kebiasaan pasta dengan daging dan ayam

bahan-bahan
a) 3/4 paket pasta, pilihan saya spaghetti
b) minyak masak, minyak zaitun lebih diutamakan
c) 3-4 ulas bawang putih dicincang halus
d) 1 tin kecil tomato puree
e) 1 tin kecil tuna dalam miyak
f) sebotol kecil jus buah (resepi asal menuntut kepada wine putih)
g) garam
h) serbuk oregano dan serbuk thyme

kaedah
1- tumis bawang puith hinnga harum
2- masukkan tomato puree, masak hingga naik minyak
3- masukkan jus, masak hingga kuah pekat
4- sementara itu, masak pasta mengikut arahan peket
5- tambahkan tuna, saiznya bergantung kepada anda
6- masukkan garam dan serbuk oregano dan serbuk thyme mengikut citarasa
7- salutkan pasta menggunakan penyepit makanan
8- biarkan selama 5 minit untuk kuah serasi
9- nikmati

New....again

   

  Without you knowing, it's already 2014..The first Muharram already left, and now another indicator of a new year comes again...I started the year as a slave, a daughter, a sister, a nurse, a friend, an enemy; perhaps, and a fiance. I would lie if I say that life comes flowing, gliding..but life comes like a river, sometimes trickling, lapping and sometimes slapping you hard across the face..
     What I've learn so far is that life comes unexpectedly bringing tears and laughter...sadness and joy... and you reap from it is what that is important..I sometimes become a good slave; pious and grateful, and sometimes be rebellious, be against what that been given.
   I ended the previous year still as a slave, a daughter, a nurse, a friend, perhaps still an enemy, and as a new wife.. The other posts, I have experience in them, whether I perceive it badly, or nicely, but, as a wife, its a road that I have just trodden.. on it, I've stepped onto thorn, but I also uncover flowers along the way.. The coming years, insyaAllah, will with my family, friends, co-worker and husband.. 
  Life is bringing more color
