Spicy lasagna tuna.

As both my parents are going for an academic leave, and as finding malay-style food will be difficult there, I somehow got a revelation on making Sambal- infused Lasagna; and somehow, it worked. My parents seem to like it, my husband praise it, so i would love for you to try it. So, this is how it was done:

A) Sambal:
-Oil -2-3 tablespoon
-Chili paste - 2 tablespoon
-Onion - 1, diced
-Tamarin paste - 2-3 teaspoon diluted in water
-Salt and sugar to taste
-Crushed dry anchovies (optional)

B) Tuna - crushed
(I used tuna chunks in oil, you can also use sardine, but I'll advice you to wash off the tomato sauce)

C) Corn or peas (optional)

D) Lasagna sheets

E) Roux
-Salt and pepper to taste

F) Cheese slices. (you can use cheddar, but mozarella have a more creamy taste.)

G) Water or milk

H) Breadcrumbs (optional)

1- Firstly, make the sambal; saute the sliced onion until fragrant, then add the anchovies (also until fragrant). then add the chili paste. cook until the color darkens, from bright red to a deep red; all the while stirring with caution. add the tamarin paste. add the salt and sugar to taste.
2- Add the crushed tuna or sardine. mix throughly.
3- Add the corn and turn off the heat. set aside
4- Prepare the roux: melt half block of butter. (about 100g), stir in flour and cook until the color seems more translucent. add in milk until smooth. (about 1 1/2 cup of milk). add in salt and pepper to taste.
5- Prepare the baking dish. put on a layer of oil onto the dish before putting in the lasagna sheet to help it un-stick to the dish.
6- Layering: lasagna sheet, then the sambal tuna, then the roux, then the lasagna sheet, the the sambal tuna, then the roux and lastly the cheese slice.
7- Pour in some water, or even better, some milk, to help the lasagna cook evenly.
8- Sprinkle some breadcrumbs if you want some crunch to your dish.
9- Bake until bubbly and cooked, about 40 minutes.
10- let it cooled down and set before enjoying. :)

I'm sure a lot of you had the chance to taste a slice of carrot cake with cream cheese frosting. I once had the chance about 3 years back. It was a revelation. it was not too sweet, but moist and nutty at the same time. But since that first time, I also have tasted once that are dry and not to my liking. So I've search far and wide for a recipe that I would like, and so far this recipe found to be a good one. Even my family agreed.

Animal felt blocks

As my Cinonet nearing 1 year old, I've been searching for suitable toys for her, and I found that blocks is one of a good choice. And in spirit of DIY, I made my own blocks using felt.. in animals form, so the idea seems much cuter.
I was the one who got excited and made more that I originally wanted.
Sheep, lion, rabbit and cat.

Bumblebee, butterfly and ladybug.

Water dwellers: whale, turtle and goldfish.

Cinonet for now just randomly swipe and throw them.. maybe she'll develop the stacking phase soon enough.. hehe.

Lasagna simplify

Since my last lasagna, I noticed that a lot of people had adjusted their lasagna recipe, which I soon follow and found more economic and no less appetizing. I did the adjusted lasagna for Aidilfitri, and it was a huge hit.
This is what I did :

1) Layer a baking dish with olive oil.

2) Put a layer of lasagna sheet, Put a layer of bologna sauce, Put a layer of white sauce

3) Repeat method 2 as needed. I only did two layer.

4) Put a layer of cheese. I manage to found Mozarella slice.

5) Pour in half a cup of milk.

6) Bake until golden.

New Love

Life has brought new love into my life. and I do love her with a vengeance. Though she can always spark an anger to my mood, but she is easy to love.. I don't know one can love someone as hard. And her cuteness is really another asset to people falling in love with her (I'm not the only one).
I thank Allah each day for giving her to us. She is such a blessing to us.
I dedicate this post to you Hana Sakinah. I do love you. May I can always be a good example to you and lead you to road to Jannah. In sya Allah.

chocolate mousse

It's been a while now since I last whip up something.. The new member of the family sure does means that I will have insufficient me-time.
This is something that I tried making for my anniversary, and it doesn't turn out as bad as I think it would.. hehe.
I got the recipe from Martha Steward web page, so you can be somewhat sure it's gonna be good, or at least not bad.

4 large egg yolks
4 tablespoons sugar
2 cups heavy cream
8 ounces bittersweet chocolate, melted
  • 1 teaspoon vanilla extract

  1. In a medium saucepan, whisk together egg yolks, 2 tablespoons sugar, and 3/4 cup heavy cream. Cook over medium-low heat, stirring, until mixture coats back of spoon, 3 to 4 minutes (do not boil). Remove from heat; whisk in melted chocolate and vanilla. Strain into a bowl; chill until cool.
  2. With an electric mixer, beat remaining 1 1/4 cups heavy cream with remaining 2 tablespoons sugar until stiff peaks form. Stir 1/3 of whipped cream into cooled custard mixture, then gently fold in the rest with a rubber spatula.
  3. Spoon into serving dishes; chill, covered, at least 30 minutes and up to 3 days. Bring to room temperature before serving.

what I did was; I doubled the ingredients, and made two type of chocolate mousse at the same time: dark chocolate and white chocolate. But I did blend between the two to get a light brown colored mousse.
